Who Curates the Wine List? Why Does It Matter?

Led by Master Sommelier Lindsey Geddes, the world’s 21st female to receive the distinction, the wine program has a clear vision that balances regions, varietals, and styles. Geddes expertise is also complemented by her husband and fellow master Sommelier, Steve Geddes. The two are the only married Master Sommelier couple that work the restaurant floor at Carversteak’s Las Vegas location.

The process to become a Master Sommelier takes anywhere from five to ten years of intense study with high-end industry experience. The four increasingly difficult exams require mastering blind testing, theoretical knowledge, and service. Only about 3% to 8% of those who take the exams end up passing.

Which Wines and Regions Are Featured in Our Selection?

You’ll find all the major wine regions across the world represented in Carversteak’s wine menu. Both Old World and New World styles are also present. Explore Bordeaux, Burgundy, and Rhone Valley wines right alongside Italian regions, like Barolo, Barbaresco, and Sicily.

Spain, Germany, and the United States regions, like the Sonoma Coast and Willamette Valley, offer expressive, modern styles often missed on most wine menus.

The varietals are just as impressive. Selections include Cabernet Sauvignon, Pinot Noir, Merlot, Chardonnay, and more. Every wine enthusiast has over 300 options to choose a selection that align with their tastes or to explore a new complexity of flavor.

A central feature of our dining room, the wine cellar was designed to be a visual statement as you enjoy your refined meal at Carversteak. The temperature-controlled rooms maintain optimal conditions for the different types of wine, including sparkling, white, red, and sweet wine selections.

Separate storage areas keep each bottle preserved correctly and the center marble island creates a welcoming space for guided tastings and private group experiences.

The intentionally visible cellar is meant to immerse you in the culture of the wine program and bring you into the experience. Rather than being exclusive, our wine program becomes a part of every meal at Carversteak.

The Blind Wine Program, known as The Blinder, removes labels altogether to let you savor each bite and sip. You can choose from pre-selected wines with flavor clues or have the option to work directly with a sommelier for a hands-on approach. Instead of selecting a wine based on reputation, The Blinder allows you to focus on balance, complexity, and personal taste.
