Carversteak brings its Las Vegas polish to Midtown from Carver Road Hospitality, the team behind Rosevale Cocktail Room and Starchild Rooftop. Led by executive chef Daniel Ontiveros, the modern steakhouse pairs a serious steak program with refined raw bar selections and elevated share plates, from short rib croquettes and caviar-and-potato popsicles to a bone-in ribeye finished with black garlic and koji. Cocktails by Francesco Lafranconi lean into classic steakhouse ritual with freezer martinis, a customizable Dirty Martini Experience and a tableside Old Fashioned Cart. Designed by Rockwell Group, the space channels old New York glamour through wood, leather banquettes and brass accents.
